Thai soup with sweet patato and coconut

Ever since I got back from Thailand, I can’t stop eating spicy food. I recently discover a recipe that is super healthy, delicious and very spicy! Want to know how to make it? Please keep on reading…


  • A spoon of coconut oil
  • 1 big onion
  • 2 garlic cloves
  • 4 cm of fresh ginger
  • 1 spoon of red curry paste, depending on how spicy you want it to be
  • One sweet patato (+- 300 grams)
  • 300 grams of carrots
  • 600 ml vegetable broth
  • 200 ml thick coconut cream
  • 100 gram dried red lentils
  • 1 spoon Gula Java
  • 1 teaspoon curcuma

Let’s cook it

First you need to cut the onion, garlic and ginger in small pieces and put them in a kettle. Add the coconut oil and the red curry paste and start to cook until golden brown. In the meantime, cut your patato and carrots into even pieces and add them to the kettle. Then add the vegetable broth and the red lentils and let it simmer for about 45 minutes. Keep in mind that this soup is very thick so if you like the soup to be thinner, add some more vegetable broth or coconut milk. When the vegetables are cooked, mix them and add the coconut milk, the curcuma and the Gula Java if needed.
